I'm Sorry Key Lime Pie

So yeaaaaaaaaaaaaaaaaaaah. When you like to bake the only way you know how to say sorry is to bake someone something right? I got in to a fight with someone and I apologized by making their favorite dessert. Key Lime Pie.

Here is my I'm sorry Key Lime Pie. Ignore the bite taken out of it. . .it t'was not my doing. He couldn't wait to try some so he took a bite and I stopped him and said NONONO I HAVEN'T TAKEN A PICTURE YET D=

He then proceeded to try to spit the bite back out onto the pie. I wasn't having any of that. >.>

This pie was really, really, reallllllly simple to make.

Premade crust, bottled key lime juice, sweetened condensed milk, and sour cream. 4 ingredients? That all you do is mix together in one bowl? You can't beat that.

So this is basically the recipe

1 graham cracker pie crust
2 cans sweetened condensed milk
1/2 c sour cream
3/4 c key lime juice
Lime zest is optional. . .I didn't use it, because I used bottled key lime juice since I'm lazy and didn't want to squeeze all the limes

Combine the S.C.M, sour cream, and lime juice together in a bowl. Mix well.
Pour into graham cracker crust and bake at 350 F for about 8 minutes. Do not brown.
Chill. Serve. Eat. Enjoy. Tra la la.

I think I would totally make this again, but maybe not use key limes. I'm not a big lime fan. Boyfriend sure did like it though. He forgave me for the fight and now has to proceed to nuzzle and bear hug me after every bite. Silly boy.

I. . . have not updated in a while holy cow. It's been kinda hectic lately. School ju
st started and I'm actually uber excited. Talking about food all day in my classes? Yes please.

I haven't really made much lately, especially since my camera is still in it's state and I have yet to buy another one.
Also since I cross stitch and I wanted to finish what I was doing before school started
(didn't happen)

But I did make two things recently. My roommate gave me some stuff to bake with and asked if I'd make caramels with it. So I did. . .

I don't think I boiled the mixture long enough, because they didn't harden to the right consistency. They tasted good, but weren't hard enough. =(

I also make homemade Reeses and had so much peanut butter mixture left over that I just made a giant one.

I took the cookies I baked over to a friends house last night and on the drive back the plate decided it wanted to slide. Causing all of the cookies to crash to the floor of my car. Goodbye cookies. I hardly knew ye. =(

Banana Marshmallow Cookies

Today even though it was uber hot yet once again I had some baking to do. I bought some bananas a few days ago and they ripened up quite a bit faster than I wanted. Basically I needed to use them up FAST. So, I put them in a recipe that I found on cookie madness. Here's a link: Chocolate Marshmallow Banana Cookies.

They're a little messy when they're done, but they taste great. Banana, marshmallow, AND chocolate together? Yes please =)

A Lil Somethin' Extra

Okay so I absolutely ADORE Cookie Dough Bites. You know. . .those tiny chocolate covered pieces of fake cookie dough? They're so addicting. When I saw a recipe for Chocolate Chip Cookies, with Cookie Dough Bites in them I did a double take. Like. . .you can. . .you can do that? Really? And they don't cook? I MUST TRY.

Soooooo that's what I did.
Unfortunately for some reason my cookies kept coming out dark and not cooked in the middle. *sigh* I guess that's what I get for being stingy and using margarine. Or maybe I can blame it on the humidity and heat? Yeah? I like that idea. HOWEVER they still taste amazing and that's all that matters right?

I just used a basic chocolate chip cookie dough recipe and added the Cookie Dough Bites along with the chocolate chips. Simple stuff= yummy cookie.

Muffins That Taste Like Doughnuts? What?

The past few days I've been craving a homemade breakfast. I wanted something different than the traditional pancakes, or waffles, or omelette's, etc. So, I went a recipe searchin'. What did I find? Muffins that taste like doughnuts. . .I found it on the Tasty Kitchen website. Unfortunately I had to make a few alterations to the recipe, because I was being cool and started making stuff before I checked if I had all the ingredients for it.

The alterations I made were:
  • Leaving the nutmeg out
  • Using butter instead of milk
  • Rolling them in a mixture of brown sugar and cinnamon
I had used all my white sugar in the muffins themselves.
Now I must say that even though they did not taste like doughnuts(probably due to the fact that I made some major changes) they were still delicious. Especially if you let them sit for a while and soak up the cinnamon sugar buttery goodness. =)
I would totally make these again, but for next time maybe I'll actually have nutmeg, milk, and white sugar. Maybe.

I made snickerdoodles for the first time today. I must say they are prettttty dang tasty. I would grab one and shove it in my mouth before even realizing what happened. Mmmm cinnamon and sugar. =)

Ignore the crappiness of the picture(remember my camera broke =( ). . . oh and the messy kitchen.

Before I made these I was deliberating between making these and making snickerdoodle cupcakes. I decided to start with cookies since they are basically like. . .classic and the fact that I've never made them before. I guess that maybe my next project will have to be snickerdoodle cupcakes.

The recipes that I used was:

1 cup(2 sticks) butter(okay I have a confession to make kids. . .I've been using margarine lately, because I'm a poor, poor college student and let's face it. . .60 cents for margarine compared to 2 something for butter. . .what're you going to choose?>.> <.< >.>)
1 1/2 cups white sugar
2 eggs
1 Tb vanilla
2 tsp baking powder
2 3/4 c flour

In bowl combine flour and baking powder
Cream butter and sugar together until light and fluffy
Add eggs one at a time stirring after each addition, add vanilla
Gradually add flour and baking powder mixture
Once combined, chill for about an hour or two
In a clean bowl mix about 1/2 c white sugar and 2 Tbs of cinnamon
When dough is chilled enough, roll into 1 inch balls and cover in the cinnamon sugar mixture.
Place on cookie sheet and bake at 375 degrees F for about 8 mins
Cool on wire rack

Too Hot To Make Spreads

*grumble grumble* So I hadn't made anything for like a week and I was again getting that baker's itch again. Unfortunately I haven't had much time lately to bake anything for a few reasons.
  • I just recently started my new job at Sam's Club(yeah yeah evil conglomerate company blah blah. I'll tell you a lil somethin' somethin', this evil conglomerate is paying me about 2 dollars more than my last job did. So I'm not going to complain =P) Anyways, not only have I started my new job and not had time to bake because of that, two other things happened recently.
  • My boyfriend just moved into an apartment about 5 minutes away
  • AND it's been waaaaaaaay too dang hot to bake.

That last one applies to today as well, BUT I just couldn't stand it anymore. I HAD to make SOMETHING.

So, I figured something easy. . .something simple would do. Wellll, I went ahead and made what Pioneer Woman calls "spreads". Which is basically a plain cookie dough that gets topped with a chocolate chip spread.

OH YEAH. Another thing that. . .how do I put this. . .made me a sad panda, is that my trusty(but crappy) camera of 2 years crapped out on me. I now cannot see the screen when I take pictures. It still takes pictures =D! I just can't see what they look like when I take them, or after I've taken them, until I put them on my computer. So, all my pictures from now on, until I get a new camera(which may be a while) are going to be guess work. UNLESS I can get my lovely roommate(if she's around) to do the photography for me. Which I should do anyways, because she actually loves photography XD

Okay anyways, here's a (crappy) picture of the spread cookies I made.
Personally I thought the cookie dough was a little. . .plain. I would put more chocolate on(or perhaps even in*shifty eye*) them. After I decided to try to make them pretty and be cool by putting a strawberry on them I actually ate the strawberry on one. Boy oh boy did that improve their taste by far! I suggest eating a strawberry on these. ;) You wont be disappointed.
